Healthy Cranberry Walnut Muffins to Start Your Day Off Right

Muffins Cranberry Nut They use delicious whole wheat flour, which is healthier choices in all-purpose flour. Oatmeal is one of the ingredients that are scientifically proven to be healthy. Nuts are healthy and should be part of the weekly ration of any person. Diabetics can enjoy this delicious cake by making some simple changes. Use 1 / 2 cup minus 1 tablespoon Splenda instead of sugar. Add 1 tablespoon sugar Splenda. For applesauce, use applesauce without added sugar (really a good idea for anyone) instead of regular applesauce.
3 / 4 cup if flour3 / 4 cup bread flour1 / 2 cup rolled oats1 tablespoons baking powder 1 / 2 teaspoon cinnamon1 Egg sugar1 slightly beaten1 / 2 teaspoon grated orange orange peel1 juice1 / 2 cup applesauce1 / 2 cup dried sweetened cranberries1 / 2 cup chopped walnuts
Preheat oven to 375 degrees. Spray 12-muffin tin with cooking spray nonstick cooking. In a large bowl, combine all-purpose flour, wheat flour, oats, baking powder, sugar and cinnamon. Mix well. Make a well in center of mixture. In a small bowl, whisk eggs, orange zest, orange juice and applesauce with a spoon until blended. Add mixture to flour mixture. Mix only until moistened. Once in cranberries and nuts. Fill muffin molds with 3 / 4. Bake at 375 degrees for 20 minutes or until browned. Note: Do not overmix the dough. During mixing, it will be hard, dry muffins will not rise properly. Batter is supposed to be soft. You must have a lumpy appearance.
