Mix at low speed until blended. Combine buttermilk, juice, lemon zest, egg, egg substitute and vanilla in small bowl. Add 2 / 3 of butter mixture to flour mixture. Mix at medium speed for one minute. Stop and scrape the sides and bottom. Bake at high speed from 45 to 60 seconds. Reduce the mixture at low speed and add the remaining liquid mixture. Stop mixer and scrape the sides and bottom of bowl. Add poppy seeds. Blend on high speed 30 seconds average. Pour into prepared muffin cups. Bake muffins 12-15 minutes or until a toothpick inserted in center comes out clean.

Banana Chocolate Muffin This is a favorite especially children. It is a particularly good way to give your diabetic child a special gift.

BANANA CHOCOLATE CHIP MUFFINS

3.4 large bananas ripe and mashed

3 / 4 cup granulated Splenda

1 / 4 cup egg substitute or 1 egg

1 1 / 2 cups flour

1 teaspoon baking soda

1 tsp tea baking powder

1 / 4 c. tea salt, optional

1 / 3 cup butter, melted

1 / 4 chocolate chips Mini Cup semi-sweet

Preheat oven to 375 degrees. In a large bowl, combine bananas, sugar and egg or egg substitute. Add flour, baking soda, baking powder and salt. Mix well. Add the butter and chocolate chips. Fill muffin tins lined with paper to 2 / 3. Bake at 375 degrees for 15-20 minutes.

Yield: 18 muffins

1 1 / 2 teaspoon baking soda

1 teaspoon cinnamon

2 tablespoons ground flaxseed

2 tablespoons raisins

Preheat oven to 350 degrees. Molds Mold Line with parchment paper.

Combine applesauce, egg substitute, buttermilk, oil, vanilla, salt, powdered milk, and Splenda together in a large bowl with a whisk. Reserve 2 tablespoons of wheat bran and set aside. TROPICAL MUFFINS

1 1 / 4 cups all purpose flour

3 / 4 cup sugar or Splenda Equal-Lite

2 v. tea baking powder

1 / 4 c. tea baking soda

Salt 1 / 2 teaspoon

1 / 4 cup coconut sugar

3 medium ripe bananas, mashed

1 / cup unsalted butter 3

1 egg beaten 1 / 4 Egg Replacement

1 teaspoon orange zest

1 / 3 cup fresh orange juice

Spray with vegetable oil

Preheat oven to 375 degrees. 12 muffin cups sprayed with vegetable oil spray and set aside.

In a large bowl, sift flour, Splenda or equal, baking powder, baking soda and salt. Add the coconut and make a well in center of mixture. Let stand 5 minutes to soak pieces of bread. Divide mixture evenly among the molds, overfilling slightly. Bake 25 minutes or until puffed and set. Serve immediately.

Per muffin: 140 calories, 17 g carbohydrate, 11 g protein
