Easy Baked Beans and Other Vegetable Recipes Suitable for Diabetics
★Just because you have diabetes does not mean you should stop beans, here’s a recipe for Quick and Easy Boston-style baked beans just for you. Other vegetable recipes to follow, all are suitable for diabetics.
BOSTON-STYLE EASY Baked Beans
4 cans white beans, drained, reserving 1 1 / 4 cups liquid
1 / 2 pound bacon, chopped, reserving half the fat
1 medium onion, chopped
1: 4 cup yellow mustard
1 / 3 cup granulated Splenda
2 tablespoons molasses
Preheat oven to 350 degrees. Sauté onion in bacon grease until translucent. Combine beans and remaining ingredients. 3 Pour into a baking dish. Bake for 45 minutes.
18 servings, 9 g protein, 21 g carbohydrate, 3 grams of sugar each.
MASHED CAULIFLOWER
1 1 / 2 pounds of cauliflower cut into large flowers
3 cloves garlic
2 cans chicken broth low sodium
Salt 1 / 8 tsp Tea
Fresh ground black pepper Dash
2 tablespoons chopped chives
In a large saucepan, combine cauliflower, garlic and broth. Be cauliflower is completely covered by liquid, add water if necessary. Bring to a boil, reduce heat to medium and simmer until cauliflower is tender, about 12-14 minutes. Reserve 2 tablespoons drippings from cauliflower and drain the remaining liquid. Cauliflower transfer and garlic in a food processor until smooth, pressing gently on the reserved liquid as needed to moisten the mixture. Season with salt and pepper. Garnish with chives. Serve hot.
A 1 / 2 cup of this recipe is 6 grams carbohydrate and 4 grams of protein making it a good choice for diabetics.
Vegetable Curry
2 tablespoons olive oil extra virgin
1 1 / 2 cup chopped onion
1 / 2 teaspoon ground ginger
1 / 4-1 / 2 teaspoon curry powder, to taste
Salt 1 / 4 tsp Tea
1 Pound Box of plum tomatoes, coarsely chopped
3 / 4 cup chicken broth
3 / 4 lb. fresh Grean beans, cleaned and sliced
1 pound yellow squash, cut into 3/4-in thick slices
Heat the oil in a large skillet, deep, medium heat. Add onions and cook until onions are tender. Add ginger, curry and salt. Cook for two minutes. Add tomatoes, stirring to coat with spices. Add broth and boil. Reduce heat to medium-low heat. Mix with a mixture of beans and cook about 10 minutes until beans are tender. Add squash to skillet, cover and simmer until squash is tender but still holds its shape, about 8 minutes.
The chicken broth gives the balance of plant proteins.
