With the continual introduction of more stringent standards of the FDA, it is important that the cooks are trained in food safety and sanitation procedures. If a head is not properly trained in these areas of food preparation, restaurants can get booked or even close. Another important characteristic of a leader is good management skills. Leaders are leaders in the kitchen and if a cook does not have management skills, can spell disaster in the kitchen. A cook is a composer of food, closely orchestrate the planning, preparation and execution of its customers to provide the food of choice. Chef Schools teach students the skills of management, not only to assist in managing a restaurant, but also helps in everyday life.
